In traditional sauce packaging process, air residue is the main risk of product oxidation, flavor deterioration, microorganism breeding and even tank swelling. Mixed sauce and broccoli sauce often contain a certain amount of oil, amino acid and other readily oxidizable ingredients, which are easy to deteriorate when exposed to oxygen, and their color and aroma will be damaged. The core of the vacuum capping technology is to effectively remove the air in the head space of the bottle through the equipment at the moment of screwing the bottle cap to form a certain vacuum negative pressure state. This process can significantly reduce the oxygen content in the container, so as to inhibit the growth and reproduction of aerobic microorganism, delay the oxidation reaction of grease and flavor substances, and fundamentally improve the intrinsic stability and safety of the product.
